Baking

Well, what a topic this is! :)  Last weekend I attended a cookie bake at some relatives of the hubby.  So during my crazy bad week I used some of that anger to make cookies. I had to make cookies at some point anyhow for this thing, I figured what better time.  I did not make my normal cookies this year... I chose all new things. But my two favorite things that I made are marshmallows & meringue cookies.  I also made a batch of macaroons... but we wont go there!  The merigue were pretty good-a bit chewy... but ok in my mind. My favorite were the marshmallows... YUMMY!! They were really good & really easy!  I normally am not a big marshmallow fan, but these were way better than the ones you get in the store.  I even plan to make some of these for the pm church service next sunday.  But I am thinking of making them in a different pan-they were to thick.  I also made some double chocolate cookies and some brown sugar shortbread cookies..  The cookie swap was pretty fun to!

  1. Lol. I warned you about the macaroons :). I'll photocopy the recipe I have. I also got the half sheet aluminum pans with the silicon baking sheets. The big key is not overmixing it. You have to scoop and fold the dry mixture in. They say in some recipes to wait til it looks like a ribbon. Don't do that, it's way overmixed then. It really only needs a few turns past when everything is mixed in. Then you have to let it dry. They say 30 minutes but I have the best results waiting 2 hours. That's when I've been able to get the little feet on them. You can store them before filling them if you want. Once you fill them it's good to leave them a day in the fridge, then leave them out to warm up. The moisture in the filling helps to make the cookie more chewy.

  2. Kelly- I know you warned me! lol!! I think i did fold in the almond flour/sugar, but I think what set it up bad was my recipe I found on martha stewart is it says to let them sit for 15 minutes before baking... But I don't know for sure if that's it. They tasted good, about half of them had holes in the top of the cookie and they were REALLY chewy - chewier than the meringue which are almost the same.... who knows I may try again!
